One day I was at home looking for something to eat for breakfast. I had one perfect avocado and knew I wanted poached eggs as well, but no toast. So I needed to improvise.
And then was born, hands down, the BEST keto avocado toast in the world. Even it wasn’t keto or gluten free, it is still the best.

Keto Avocado Toast
How do I make keto avocado toast without bread?
People have gotten creative over the years in substitutions for bread. Sure, you can buy low carb and keto breads, or you can trick yourself into thinking cauliflower is bread. But not here. No. We found a much better solution.
Take two half cups of mozzarella (separated) and place each one on a non-stick frying pan at medium heat. You will notice it start to cook at the bottom and get brown. When this happens, you flip it and cook the other side.
This fried cheese will serve as the bread portion of your keto avocado toast. You should have two round pieces of fried cheese.
How do I cut an avocado?
They always say there are several ways to do anything, but I believe the best way to cut an avocado is in half.
- Cut the avocado in half and pull out the pit.
- Cut the two hales in half again and pull the rind off.
And that is it. You can either smash your avocado in a bowl or cut more slices and layer them. I personally think smashed avocado works best on toast.
Do I have to use eggs on my avocado toast and what is the best kind?
Absolutely not. You can omit the eggs, but I think poached eggs taste the best.
Egg selection is up to you! I know a lot of people love scrambled eggs or fried eggs on their avocado toast. So it will be a personal decision. I chose poached eggs because they are my favorite and the yolk compliments the cheese and avocado best.
How do I poach an egg?
I have a long standing grief with ordering poached eggs at restaurants because maybe 1% of the time they come out right, yet they are the easiest thing in the world to make! You do not need to know how to cook to make a fantastic poached egg.
Take a frying pan (the smaller, the better) and fill it with enough water to cover an egg or two completely. Once you put it on the stove and the water is boiling, put 1-2 eggs into the water and set the timer for three minutes.
When the timer goes off, remove each egg with a slotted spoon and place onto your already prepared keto avocado toast.
These poached eggs will come out perfect! The egg whites are cooked and the center of the egg is thick with some run, but not raw. You do not want runny white eggs. You want them to have a golden thick creamy center.
The BEST Low Carb Avocado Toast Recipe
I’m sure everyone has their own ideas about what the best keto avocado toast is – but I PROMISE YOU, this is the best recipe.
Pan fry two half cups of mozzarella cheese, top with smashed avocado, then add a poached egg to each one, and sprinkle with Everything but the Bagel Seasoning.
Add-ons for your keto avocado toast
You do not have to stop here! You can add whatever you want that is keto friendly (to keep the recipe keto).
Bacon is a great addition. I recommend putting it either on top of the cheese before the avocado OR cutting it up small and sprinkling it on top of the avocado. You want to make it easy to eat and not want to fight with it.
If you want to do some greens, you could add some sauteed spinach. I would also put this on your keto avocado toast underneath the avocado.
Keto Avocado Toast: The BEST Low Carb Avocado Toast

This is not only the easiest, but the best keto avocado toast! If you are eating keto, gluten free or low carb, this is a fantastic dish!
Ingredients
- 1 Ripe Avocado
- 2 1/2 Cup servings of mozzarella cheese
- 2 Eggs
- Everything but the bagel seasoning (optional)
Instructions
- Take both of your half cup servings of mozzarella cheese and place each one on a frying pan in a circle on medium heat. Allow them to brown on both sides and then move to a plate.
- Cut your avocado and mash it. Split the mashed avocado across your cheese pieces.
- Boil water in a frying pan. Make sure it is enough water to cover two eggs. When you place both eggs into the water, set the time for three minutes. When the timer goes off, use a slotted spoon to remove each egg, one at a time, and place it on each of your keto avocado toasts.
- Sprinkle with Everything but the Bagel Seasoning (optional) but highly recommended!
Notes
You do not have to use mozzarella cheese. I have used Parmesan and cheddar before and they are just as good. Just make sure you use a shredded cheese.
I would not recommend using an avocado that is not ripe as it will not taste right.
